Blast chilling

Blast chilling rapidly reduces the temperature of cooked food to +3°C in just 90 minutes, allowing you to store it longer and serve it later with the same freshness and flavour as if it were just prepared. Unlike traditional cooling, which releases steam and leads to the loss of vital nutrients, vitamins, proteins, and flavour, blast chilling locks in nutrition and taste at their peak.

Rapid freezing

Smeg Blast Chillers allow for rapid freezing, which lowers the core temperature of food to -18C. Unlike traditional freezing, rapid freezing forms microscopic ice crystals that preserve food fibers, keeping the taste, appearance, and aroma of ingredients intact.

Temperature Conservation

At the end of each cooling cycle, the blast chiller switches to temperature conservation mode, keeping stored food at the ideal temperature. Perfect for maintaining the taste and texture of desserts and ice cream for when you're ready to serve.

Controlled defrosting

Defrost quickly and evenly without compromising quality. The controlled defrosting function keeps ingredients hydrated, prevents oxidisation and changes in colour and consistency. 

Perfect proving

Use your blast chiller to perfectly prove dough at the correct temperature. The proving cycle has up to 3 stepsallowing you to obtain extremely light and digestable doughs using minimum yeast. 

Chill Drinks

Thirsty? Our blast chillers can quickly chill bottles (1˚ per minute) letting you enjoy wine and other drinks at their perfect temperature within minutes. The blast chiller’s double-sided shelf features a flat side for food and a specially designed undulated side to securely up to 9 standard bottles or 4 magnums.

Slow, low temperature cooking

Cook at a consistent low temperature (up to 75°C) with the low-temperature cooking function. Experience the benefits of slower, gentler cooking that produces tender, juicy meats with richer flavours and preserved aroma and texture.
