Demystifying induction

Induction technology is not new, but it is gaining in popularity given its precise temperature control, powerful capabilities and energy efficiencies.  Many people are unclear just how induction works so perhaps we can lend a hand to increase your awareness.  In short, the power and precision of the technology comes from an electromagnetic field below the glass cooktop surface that is generated by passing an alternating electric current through a coil of copper wire.  The resulting oscillating magnetic field wirelessly induces current directly to magnetic cookware, causing it to heat up.

Essentially, induction cuts out the intermediate step of heating up a burner and then transferring the heat to the pot.  90% of the energy created is transferred directly to the pot which is significantly higher than gas cooktops where, on average, 50% of the energy is wasted, going around the pot thus increasing the ambient room temperature. While that might be a good think in Boston during winter months, it will increase air conditioning bills in Dallas all summer long.  Food for thought.
