Vegetable flan

560 g Zucchini
2 Eggs
160 g Cream
50 g Grated Parmesan cheese
10 Leaves basil
7 g Salt

Wash and peel the courgettes. Grate them with a large hole grater or cut them into fillets with a vegetable cutter.

Collect them in a bowl and add the salt. Mix well and leave to rest for 40 minutes. Squeeze the zucchini well with a cloth.
