WAFFLE DOUGH (makes 10 servings)
- 190g plain flour
- 280g milk
- 2 eggs
- 60g grated cheese
- 60ml extra virgin olive oil
- 12g instant yeast 7g salt
TOPPING
- 250g cream cheese
- 200g hand shelled fresh peas
- Fresh dill, chopped
- 1 Haas avocado
- Salt & Pepper

TOPPING
Separate the egg whites from the yolks and whisk at maximum speed using your Smeg hand mixer (with the whisk attachments).
In another bowl, mix the egg yolks with the milk and extra virgin olive oil. Add the grated cheese and mix again. In the same bowl, add the flour and baking powder and whisk again using your mixture at a low speed until mixture is well combined, but don’t over mix as your waffles won’t be as fluffy and tender.
Gently fold in the whipped egg whites with a spatula, taking care not to dismantle the mixture.
Pour about a ladle of the mixture onto a pre-heated and greased waffle iron. Cook for about 5 minutes, or until golden brown.
To prepare the peas, add to your non-stick Smeg Saucepan with a drizzle of olive oil over medium-high heat and cook for about 4-5 minutes string occasionally, till peas are tender. Season with salt, pepper and add a squeeze of lemon juice and stir.
Slice the avocado.
In a bowl, combine the cream cheese with black pepper and chopped dill.
Spread a layer of cheese onto waffles, add the avocado, peas and garnish with a sprinkle of dill. Serve and enjoy!
