Combine all the ingredients together, in a Standmixer, and knead for 5 minutes. Cover and allow to rest for at least 20 minutes, in the fridge.
Divide the mix into 6 balls of dough. Roll into circles that are 2mm in thickness.
Place into a non-stick frying pan, on medium to high heat, for 1-2 minutes on one side. Flip, and layer the fillings onto half of the piadina. Fold the piadina in half, and half again.
