Vacuum drawers are excellent for preserving foods for longer and enhances the protection when freezing and cooking food. It is also perfect for preparing food ready for delicate sous vide cooking. Whilst many devices achieve a vacuum of 60 – 70%, the Smeg vacuum drawer can deliver 99.9%. This precision inevitably enhances the final results.

Foods last, on average, four times longer at room temperature or in the fridge. If frozen, food can be kept for months and retains all flavours and consistency, as if it has just been prepared. The vacuum process protects the food items from dust and bacteria. Even liquid can be vacuum sealed.

The sealed environment preserves the nutrients and flavours to ensure that the food tastes as good as if it was made from fresh ingredients.


By compression and decompression, the Chef’s function speeds up the infusion of marinades providing excellent flavour in foods.

Combined with special vacuum bags, and the use of Smeg’s steam oven, low temperature sous vide cooking allows you to retain aromas, juices, nutrients of the ingredients, together with consistency and flavour that is impossible to achieve through traditional cooking methods.

With 1 – 3 levels of seal, you can preserve foods from mousse, soft cheese to berries, right up to meats, root vegetables and sous vide cooking.

It’s possible to select of 3 levels of sealing. From an open packet of crisps, to tough aluminium and multiple bags in one seal.

To ensure a perfect and reliable seal, the Smeg vacuum drawer seals twice.

Programs / Functions

The vacuum in container function guarantees to create vacuum into glass or plastic containers choosing among three different levels. Use only certificate containers suitable for vacuum and able to resist to a 99,9% vacuum. The vacuum in bag function guarantees to create vacuum into bags choosing among three levels. It is also possible to set the 0 level to seal the bag without creating the vacuum. The Chef function alternates compression and decompression cycles and speeds up some operations, such as marinade or infusion, that otherwise would require a lot of time. The machine can be set at three different sealing levels. Setting the maximum level is possible to seal more bags at the same time with a unique cycle.

Technical Features

Preservation vacuum bags. These bags endure temperatures from -25°C to 70°C (for 2 hours) or 100°C (for 15 minutes). Suitable for pantry, refrigerator and freezer storage, they cannot be used for vacuum cooking. Sous-vide cooking bags. These bags endure a maximum temperature of 85°C (for 75 hours), 100°C (for 4 hours) or 121°C (for 30 minutes). Suitable for pantry and refrigerator storage, they cannot be storage in the freezer. The stabilization device maintains the drawer open when used, avoiding closing it accidentally. The vacuum sensor guarantees the achievement of the maximum vacuum connected to the level set. If the value is not reached, the bag is not sealed. The machine carries out a double phase welding which guarantees to seal dirty and oily bags as well. Setting the highest vacuum in bag/container level, it is reached a 99,9% vacuum.
