Adjust the cooking time based on the ripeness of the fruits and their water content. If the fruits are very ripe or watery, reduce the cooking time. For firmer fruits or lower water content, increase the cooking time as needed.

Step 1

Dice the strawberries and combine them with sugar, lemon juice, and vanilla. Place the mixture in a Pyrex glass bowl. Preheat the oven to 285°F in combi-microwave mode at 300 watts. Bake for approximately 15 minutes.

Step 2

Remove the bowl from the oven. If you prefer a smooth texture, use a blender. For a chunkier consistency, stir the compote vigorously with a wooden spoon.

Step 3

Allow the compote to cool to room temperature, then transfer it to a container and store it in the refrigerator.
