For the Fillet
4 Beef fillets (about 200 g each)
Rosemary to taste
Sage to taste
Salt to taste
Olive oil to taste
For the Sauce
250ml Balsamic vinegar
40g butter
4 cloves
1 cinnamon stick
3 juniper berries
Salt to taste

Preheat the oven with the BBQ inside.

Fillet

Finely chop the aromatic herbs and season the fillets with the aromas, salt and a drizzle of oil.

Remove the BBQ accessory and place the slices on the Grill side, then bake. Do not turn the meat during cooking.

Use the 2nd level of the oven - 260° C and cook for 8 minutes for medium cooking or 6 minutes for rare cooking.

Accompanying sauce

In a pan, pour a drizzle of oil and add the butter to melt it over low heat.

Once dissolved, pour the balsamic vinegar, crushed juniper berries, cinnamon and cloves into the pan.

Cook until the sauce is reduced, add salt to taste and pour over the cooked fillet.
