Matcha cupcakes

Soft and light, these matcha cupcakes have a gentle green tea flavour and a moist texture. Topped with whipped cream and a sprinkle of matcha powder, they make a simple and delicious treat.

Ingredients

180 g Flour
10 g Powdered matcha tea
½ tsp Bicarbonate
1 spoon Baking powder
190 g Sugar
Salt, a pinch
175 g Buttermilk
100 g Seeds oil
1 Eggs
2 sachets Vanillin
240 g Fresh whipping cream

Proceedings

Mix the buttermilk, the oil, the egg, the matcha powder, and the vanillin. Sift the flour, the baking soda, the sugar, and the baking powder. Turn on the stand mixer with the leaf beater mounted and mix liquid ingredients with the powdered ones. Divide the mixture into the ramekins.

Place in the oven at 180° for 12/15 minutes.

For the frosting: whip the cream with the whisk accessory of your Smeg set, adding the sugar and the vanillin until the foam is thick and glossy.

Top the cupcakes with cream and matcha powder.
