English cream

English cream is a smooth custard made with cream, egg yolks, sugar and vanilla. Perfect as a dessert sauce or pastry filling.

500 g Cream
100 g Sugar
125 g Egg yolk
0,2 g Vanilla extract

How do you want to cook the recipe?

Mix the ingredients well in a large glass or ceramic bowl.

Place the bowl on the third shelf of the Smeg oven with Smart Cooking function, and select the Creme> English Cream program

In a saucepan, bring the milk and sugar to the boil together with the lemon zest.

In a 500 ml pyrex bowl, minimum weight and 1 liter maximum weight, mix well the egg yolks, cream and vanilla.

Once it has boiled, using a whisk, gradually incorporate the milk with the egg yolks and cream.

Remove the lemon zest and mix well with an immersion blender.

Clean the edges of the bowl well.

Place the bowl on the third shelf of the oven and cook in Micro mode (300W microwave power) for 3 minutes.

Remove the bowl from the oven and mix the cream with the help of a spatula. Repeat the cooking cycle four times. Pass through a colander before serving.
