Tarte Tatin with vanilla ice cream

This tarte Tatin features tender caramelised apples baked under a crisp brisé crust. Served warm and paired with vanilla ice cream for a simple, elegant dessert.

Ingredients

220 g Brisé, ready-made
350 g Apples
120 g Sugar
20 g Butter
160 g Vanilla ice cream

Proceedings

Cut apples into slices and pour 120 g sugar with water into a saucepan and caramelize reaching a temperature of 170°, stir in the 20 g butter.

Pour the mixture into a cake pan and lay the apples on top and sprinkle with the remaining 20 g sugar and the 20 g butter.

Roll out the brisé dough 5 mm thick and cover the apples making sure to wrap around the edges. Bake at 200° traditional fan assisted mode for 30 minutes.

Once ready, invert the tarte tatin onto a serving dish and accompany with ice cream.
