Rouge Noir

A bold, aromatic cocktail with Amaro Zero, Robì Bitter, and sparkling water infused with citrus peel and sage. Refreshing and herbaceous.

Ingredients

800 ml Cold water
3 cl Amaro Zero
3 cl Robì Bitter
Sage leaves, to taste
Orange or grapefruit peel, to taste
Ice, 3-4 cubes per glass

Proceedings

Peel the grapefruit or orange and set the peel aside.

Wash the sage or bay leaves, then add the citrus peel and 50 g of fresh sage in 1 litre of medium mineral water and let it infuse. Then, filter the infusion to remove the sage.
Fill the Smeg soda maker bottle with water and carbonate for 10 seconds.

Place 3–4 ice cubes in a low tumbler glass.

Pour 3 cl of Amaro Zero and 3 cl of Robì Bitter into the glass.
Top with the infused sparkling water, and garnish with a strip of citrus peel and a fresh sage or bay leaf, if desired.
Stir gently and serve.
