Saffron cous cous with vegetables

Oven-baked cous cous infused with saffron and served with roasted mixed vegetables. A colourful and aromatic vegetarian dish.

Ingredients

80 g Eggplant
80 g Bell pepper
80 g Zucchini
80 g Red onion
320 g Cous cous
40 g Extra virgin olive oil
540 g Water
0,6 g Saffron
12 g Salt
4 g Pepper

Proceedings

Select the cooking sequences with the multitech function and begin by pre-heating the oven at 180°C.

In the meanwhile:

Place all the vegetables in the pyrex tray. Add the other ingredients and mix well. 

In another pyrex tray place the cous cous. Dissolve the saffron in a water bowl together with oil, salt and pepper. Mix it well and add to the cous cous.

When ready start cooking.

Step 1: select the fan assisted mode and place the vegetables tray on the second shelf of the oven. Bake at 180°C for 18 minutes.

Step 2: select the turbo function and place the tray with the cous cous on the fourth shelf of the oven and cook bake at 190°C for 12 minutes.
