Savoury waffles with dilled creamy cheese, spring peas and avocado

Golden and fluffy, these savoury waffles are topped with creamy cheese mixed with dill, fresh avocado and sweet peas. Light and tasty, they’re perfect for a spring meal full of fresh flavours and soft textures.

Ingredients

Waffle batter
190 g Flour
2 Eggs
60 g Grated cheese
280 ml Milk
60 ml Oil
7 g Salt
12 g Instant yeast (baking powder)

200 g Peas
250 g Creamy cheese
1 Avocado
Dill, to taste
Pepper, to taste

Proceedings

Separate the egg whites from the yolks, and whip them until stiff with the maximum speed of the hand mixer using the wire whisk. In another bowl, mix the egg yolks with the milk and extra virgin olive oil. Add the grated cheese and mix again. In the same bowl, add the flour and baking powder and, on speed 1, mix the mixture.

Incorporate the whipped egg whites with a spatula, taking care not to dismantle the mixture.

Pour about a ladle of the mixture onto a pre-heated and greased waffle iron. Cook for about 5 minutes, or until golden brown.

Shell the peas and pass half of them in a pan with a drizzle of oil.

Slice the avocado.
In a bowl, add the spreadable cheese and season with black pepper and chopped dill.

Spread a layer of cheese on the waffles and add the avocado and peas, both cooked and raw.

Garnish with fresh dill.
