Separate the egg whites from the yolks, and whip them until stiff with the maximum speed of the hand mixer using the wire whisk. In another bowl, mix the egg yolks with the milk and extra virgin olive oil. Add the grated cheese and mix again. In the same bowl, add the flour and baking powder and, on speed 1, mix the mixture.
Incorporate the whipped egg whites with a spatula, taking care not to dismantle the mixture.
