Combine all the ingredients in a bowl, salt to taste, then mix all the ingredients vigorously. Spread a sheet of parchment paper at least 45 cm long on a shelf and cover it with a very thin veil of EVO oil; if necessary, help yourself with your hands.
Flatten the filling on the baking paper with your hands, obtaining a uniform cylinder of about 35 cm in length. Wrap the cylinder with baking paper. Tighten well and roll the ends inwards. Place on a plate and bake.
