Beef fillet with balsamic vinegar sauce

Tender and flavourful, this beef fillet is seasoned with herbs and cooked on the grill without turning. Served with a warm spiced balsamic sauce, it’s a simple, elegant dish with rich depth.

Ingredients

For the fillet
4 Beef fillets (around 200 g each)
Rosmary, to taste
Laurel, to taste
Sage, to taste
Salt, to taste
Oil, to taste
For the sauce
250 ml Balsamic vinegar
40 g Butter
4 Cloves
1 Cinnamon stick
3 Juniper berries
Salt, to taste

Proceedings

Preheat the oven with the BBQ inside.

Finely chop the aromatic herbs and season the fillets with the herbs, salt and a drizzle of oil. Remove the BBQ and place the slices on the Grill side, then put them in the oven. Do not turn the meat while it is cooking.

Cooking:

Use the 2nd oven level - 260 ° C, cook 8 minutes for medium cooking or 6 minutes for rare cooking.

Accompanying sauce preparation 

In a pan, pour a drizzle of oil and add the butter to melt it over low heat. Once melted, pour the balsamic vinegar, crushed juniper berries, cinnamon and cloves into the pan. Cook until the sauce is reduced, add salt to taste and pour over the cooked fillet.
