Roasted pork loin

Pork loin rubbed with rosemary, lemon zest and garlic, then roasted until golden and tender. A simple and flavourful main course.

Ingredients

1 Pork loin
2 Garlic clove
4 sprigs Rosemary
1 Grated lemon rind
15 g Salt
3 g Pepper
Oil, to taste

Proceedings

On a cutting board, finely chop the rosemary with the lemon zest and garlic. Transfer to a bowl and mix together with the salt and pepper. Massage the piece of meat with the flavored salt and very little EVO oil. Leave to marinate for about ten minutes on the pan or overnight, wrapped in plastic wrap.
