Apple strudel with raisins and pine nuts

The warmth of the apples and the crunch of the pine nuts, wrapped in a thin layer of puff pastry, make for a classic strudel with a sweet flavour and an enticing aroma.

Ingredients

1 Pack of rectangular puff pastry
1.2 kg Peeled apples
120g Sugar
50g Butter
100g Breadcrumbs
60g Raisins
60g Pine nuts
1 Lemon
1 Teaspoon of cinnamon
1 Egg
Icing sugar to taste

Brown the breadcrumbs in a frying pan with the butter, stirring constantly. Slice the apples, place them on a baking tray lined with baking paper and bake in a preheated oven at 200 °C for 12 minutes, then leave to cool.

In a bowl, mix together the apples, toasted breadcrumbs, sugar, cinnamon, grated lemon zest, raisins (softened in lukewarm water, squeezed and dried), and pine nuts. Roll out the pastry on the work surface, keeping the baking paper provided underneath, place the filling on top, arranging it parallel to one of the long sides of the rectangle, then roll the pastry over the filling, overlapping it. Seal the ends of the roll by pressing with your fingers.

Transfer the strudel to the baking tray with the paper, make several small cuts on the surface, brush with the beaten egg mixed with 3 tablespoons of water, and bake in a preheated oven at 180°C with 25% steam for about an hour, or select the ‘Desserts’ function on the display and set it to ‘Strudel’. Serve warm, dusted with icing sugar.
