Rolled roast pork with bacon, apples and plums

Ingredients

1 kg Pork loin ,in one single slice
100g Breadcrumbs
60g Chopped pancetta
50g Pitted prunes
1 Golden Delicious apple
Milk to taste
1 Egg
40g Grated Parmesan
20g Dry amaretti biscuits
20g Blanched and toasted almonds
A pinch of nutmeg
1 Sprig of sage
2 Glasses of dry white wine
20g Butter
Extra virgin olive oil, to taste
Salt to taste
Pepper to taste

Soak the bread in milk for half an hour,

then squeeze out the excess liquid, crumble it and place it in a bowl. Add the pancetta, chopped garlic, Parmesan, egg, chopped prunes, chopped amaretti biscuits and almonds, salt and pepper. Peel the apple and slice it.

Place the meat between two sheets of baking paper

and flatten it with a meat tenderiser. Spread the

filling over the top and arrange the apple slices, then roll up the meat and tie it with kitchen string, inserting a few sage leaves. Transfer the roast to a roasting tin, brush it with softened butter and a little oil,

then cook it in a preheated oven at 200°C for 10 minutes.

Turn it over and cook for a further 10 minutes.

Baste the roast with the wine and continue cooking

in a preheated oven at 180°C with 25% steam for about an hour and 15 minutes. Remove the roast from the roasting tin, wrap it in aluminium foil and leave to rest for 10 minutes, then serve sliced.
