Potato and Porcini Mushroom Millefeuille with Thyme

Thin slices of potato and sautéed porcini mushrooms are layered to create a perfect balance of softness and crunch. Fresh thyme rounds off the dish, bringing out the forest aromas with every bite.

Ingredients

600g Potatoes
500g Fresh porcini mushrooms
1 Clove of garlic
1 Sprig of thyme
Nutmeg
Extra virgin olive oil to taste
Salt to taste
Pepper to taste

Peel the potatoes, slice them thinly, place them in the steamer basket and steam them at 100 °C for 10 minutes. Remove them from the steamer and leave to cool.

Meanwhile, remove the mushroom stems, scrape them clean and wipe them with a damp cloth, ideally without soaking them in water. Slice them thinly and cook over a high heat for 3–4 minutes in a frying pan with 2 tablespoons of oil, ½ a peeled garlic clove, salt and pepper.

Chop the remaining garlic and mix it in a bowl with the thyme leaves, salt, pepper and grated nutmeg. In a greased baking dish, layer the potato slices, a thin layer of the herb mixture and a layer of mushrooms, then continue in the same way until all the ingredients are used up. Drizzle with a little oil, add sprigs of thyme and bake in a preheated oven at 180°C for about 20 minutes, until golden brown. Serve the mille-feuille sliced as a side dish or in larger portions as a vegan main course.
