Recco focaccia with cheese

An icon of Ligurian tradition. Two wafer-thin layers of pastry enclosing a centre of melted cheese, crispy on the outside and creamy on the inside. Ingredients

400g Durum wheat flour
700gr crescenza
Extra virgin olive oil to taste
Salt to taste

Pour the flour onto the work surface and make a well in the centre. Pour 4 tablespoons of oil, 200 ml of water and a pinch of salt into the well. Start mixing the ingredients, first with a fork, then with your hands. Knead the dough until it becomes soft and elastic. Wrap it in cling film and leave it to rest at room temperature for at least an hour.

Divide the dough in half. Dust the work surface with flour and roll out the two halves with a rolling pin, pulling and lifting the dough with your hands to obtain

2 very thin sheets measuring approximately 35x28 cm. Grease a shallow rectangular baking tray with a little oil and place one sheet of dough in it. Spread the cheese over it, then cover with the remaining sheet and overlap the edges to seal them.

Prick the surface in several places, whisk 3 tablespoons of oil with 3 tablespoons of lukewarm water and a pinch of salt to brush over the surface of the focaccia. Bake the focaccia in a preheated oven at 250°C until golden brown (10–12 minutes), or select the Bread function on the display and set it to Focaccia. Leave to rest for 3–4 minutes covered with a cloth, then serve.
